Ingredients

Main Ingredients
1.5 to 2 kg pumpkin
150 g shrimps
150 g scallops
1/2 red bell pepper, diced
1/2 green bell pepper, diced
7 to 8 water chestnuts, diced
1 tbsp ginger, minced
1 tbsp garlic, minced
2 tbsp Shaoxing wine (optional)

Sauce
1 tbsp soy sauce
1 tbsp oyster sauce
1/2 tsp sugar
1/2 tsp white pepper
4 tbsp water
1/2 tbsp tapioca starch

Preparations

Prep The Pumpkin (Part 1)

  1. Steam pumpkin for 20 to 30 minutes or until fork tender.

Make the Sauce

  1. Mix soy sauce, oyster sauce, sugar, white pepper, water and tapioca starch. Set aside

Prep The Pumpkin (Part 2)

  1. Once the pumpkin is cool to touch, chop off the head.
  2. Scoop out the seeds and some flesh to make a huge bowl. Set aside.

Cook

  1. Heat a wok on medium heat.
  2. Add 2 tablespoons of cooking oil.
  3. Add scallops. Stir-fry for about a minute or two. Do not overcook it.
  4. Add a pinch of sugar. Give it a quick stir-fry. Remove from the wok and set aside.
  5. Add shrimps. Like scallops, only cook for about a minute or two.
  6. Add a pinch of sugar then give it a quick mix. Remove from the wok and set aside.
  7. Clean the wok if necessary.
  8. On medium heat, add 2 tablespoons of cooking oil.
  9. Add minced ginger and garlic. Stir-fry until fragrance.
  10. Add bell peppers. Stir-fry for a few minutes until just softened enough.
  11. Add cooked scallops, cooked shrimps and water chestnuts.
  12. Add the sauce. Stir-fry until all the ingredients are coated with sauce.
  13. Finally, add Shaoxing from the side of the wok.
  14. Cook for about 30 seconds and we are done!
  15. Serve in the pumpkin bowl we have prepared earlier. Enjoy!
