Black Pepper Udon – A quick and easy fix for your udon craving without having to go to the Sushi King.
How to make Black Pepper Udon
Preparation
for 2 servings
Main ingredients
- 400 g udon noodles
- 1 chicken breast
- 40 g shiitake mushrooms
- ½ yellow onion
- 4 spring onions
- ¼ cabbage
- 1 carrot
- ½ green bell pepper
Black pepper sauce
- 4 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 tbsp black pepper
- 2 tbsp sugar
- 2 tbsp water
Garnish
- Fresh spring onions
Step-by-step
Preparation
- Butterfly chicken breast into 2 fillets, then slice into strips.
- Slice mushrooms, yellow onion and cabbage.
- Chop spring onions into 4-cm pieces.
- Julienne carrot and bell pepper.
Black pepper sauce
- In a bowl, mix soy sauce, oyster sauce, dark soy sauce, black pepper, sugar and water.
Marinate chicken
- Marinate chicken with 4 tbsp of the black pepper sauce for 15 minutes.
Prepare noodles
- Pour boiling water into udon noodles and let soak for 2 minutes. Drain thoroughly.
Stir-fry all ingredients
- Stir-fry chicken for about 2 to 3 minutes or until cooked through.
- Remove chicken and set aside.
- Add mushrooms. Stir-fry for 1 to 2 minutes.
- Add yellow and spring onion. Stir-fry for about 1 to 2 minutes or until onions turn slightly translucent.
- Add cabbage and carrot. Stir-fry for 1 minute.
- Add 4 tbsp water and continue to stir-fry for another minute.
- Add bell pepper. Stir-fry for 1 minute.
- Finally, add udon noodles, cooked chicken breasts and black pepper sauce. Stir and mix until all ingredients are well coated with sauce.
- Plate and top with some freshly chopped spring onions. Enjoy!
